Lunchables
I am searching for ideas for healthy, nut-free sack lunches for school children. Some other mothers and I are trying to put together a little sack lunch handbook to inspire mothers who are stuck on peanut butter. Please send in your ideas! Here are a few gimmes:

Fresh fruit
Ham sandwich
Crackers with cheese
Carrot sticks
Graham crackers
Raisins
Popcorn
Fruit cup
Pudding cup
Bagel
Cheese sticks
Chicken skewers
Dried fruit
Cereal
Celery w/cream cheese
Yogurt
Granola
Soup

I'd love your "combo" ideas. For instance, my children like to snack on a mix I make with frosted mini-wheats, dried fruit and m&ms. Some children like dried fruit sprinkled on their celery and cream cheese sticks (but mine don't).

How about the stuffing of choice wraped in a whole wheat tortilla? Sometimes just the different shape of a lunch item can interest a kid instead of the same old boring sandwich. :)

It may not be quite appropriate for school lunch, but this summer my children ate too many popsicles a day. I decided to put their Gogurt in the freezer and at least I knew they were nutrious!

Here's a recipe for a yummy cookie that's not too bad for you (as far as cookies go). Elijah loves it. It DOES have PB in it - but I think your idea was to stay away from PB SANDWICHES, right? I got this from a Dillon mom; so let's call these "Dillon Mom Cookies."

1/2 C. butter, softened
1/2 C. Peanut butter
1/2 C. brown sugar or honey
1 egg
1/2 t. vanilla
1 C. Whole Wheat Flour
1 t. baking soda
1/2 C. dry milk powder

Add 1/2 C. of ONE of the following:
Wheat germ
rolled oats
sunflower seeds (or sesame)

Cream butter, peanut butter and honey (or brown sugar). Add egg and vanilla. Stir in flour, soda, dry milk and optional ingredient. Drop by teaspoonfuls on cookie sheet and flatten with fork. Bake 350 for 8 to 10 minutes.

Here's another Dillon mom recipe for breadsticks for lunches. She calls them "Toddler on the Run Breadsticks" but let's call them "Kids on the Run Breadsticks" so big kids won't be thrown off by the "toddler" part.

1 C. Whole Wheat flour
1 t. Cinnamon
1 t. baking soda
1/4 C. butter
3/4 C. grated Cheddar cheese
1 egg, beaten
1 T. cold milk

Mix flour with cinnamon and soda. With blender, cut in butter and cheese until mixture becomes coarse crumbs. Blend in egg beaten with milk. Stir with fork until dough clings together.
Take teaspoonfuls of dough and roll into little sticks. Place on ungreased cookie sheet. Bake 8 to 10 minutes at 375.

Thanks, guys. These are some great ideas. Keep 'em coming.

We do have to stay away from all nut products completely for school purposes (we have some students that are at risk for death from tree nut contact), but I think I'll try that peanut cookie recipe at home!!
