Anny’s Rosemary Roasted Sweet Potatoes
2 lbs. sweet potatoes, roughly cut into 1 1/2" pieces
3 lg. cloves garlic, peeled and coarsley chopped
1 T. chopped fresh rosemary
2 T. olive oil
Toss together in a roasting pan. Roast 40 min. at 375, turning occassionally.
1/4 c. toasted pine nuts
2 T. chopped parsley
1 tsp. salt
1/4 tsp. coarsely ground pepper
Season potatoes just before serving.

Makes 6 servings.

Anny is my neighbor. She brought this to one of our annual Christmas dinners and everyone loved it. She always brings the BEST food!
