Jan's Bowl of Red (revised)
(for the beginning of the season, of course)

5-8 slices of bacon

1 ½ pounds hot sausage
1 1/2 pounds hamburger meat

1 medium yellow onion, chopped

1 garlic clove, minced

2 jalapeno peppers, minced

Chili powder

Cayenne pepper

Cumin

Oregano

Worchestire sauce

16 ounces tomato paste

8 ounces canned pinto beans

24 ounces water

Cook bacon, crumble. Throw out grease. Cook sausage. Reserve grease. Cook beef and onion in sausage grease. Add peppers for last few minutes. Add to pot. Add remaining ingredients except beans. Simmer 2 hours. Add beans 30 minutes before serving. This always tastes best the next day. Good with grated cheddar, saltines, Fritos, and/or cornbread.

Jan, you mention "beef" in the instructions but not in the ingredients. Is it supposed to be "garlic" that goes in with the onions? Or is this like the episode of Dick Van Dyke, where Laura suspected that Millie gave her the wrong instructions for a recipe, just so it wouldn't turn out as well for anyone else? Is that your scheme?

Oh, man. You caught me!!

Thanks for the find, PE. I've added the hamburger to the list of ingredients.

By the way, P.E. was my least favorite subject in school. The uniforms we had to wear were hideous, but changing in the locker rooms and then feeling yucky for the rest of the day made it all unbearable.

I'm getting a lot of questions about measurement. I don't use measurements, and this is my recipe, so even what I have given you is a guestimate. You can add things or leave things out...you can put a lot of spice or a little (I use a lot). Sorry I don't have a better system for you. The chili I made today had two cans of chopped tomatoes, one with peppers in it. I also added fennel seed and left out the cumin (that was an accident) and the jalapenos. Just have some fun with it!!
